Flesh quality recovery in female rainbow trout (Oncorhynchus mykiss) after spawning

In fish rearing industry, sexual maturation results in loss of profit or at least a delay to valorize spawning fish. Indeed, many edible display poor fillet quality after and as such cannot be processed immediately spawning. So, post-spawning period may allow the recovering an acceptable quality. So far, flesh restoration has received little attention. present study, evolution technological organoleptic qualities was investigated diploid autumnal strain female rainbow trout (24 months age) Immediately spawning, nine groups (n = 25) from same cohort were placed separately into circular tanks fed ad libitum. Fish then sampled 0, 1, 2, 4, 8, 13, 16, 24, 33 weeks (PS0, PS1, PS2, PS4, PS8, PS13, PS16, PS24, PS33). Immature (no egg produced) also controls beginning (C0) end (C33) experiment. PS0 showed significantly lower raw yield than control (C0). Furthermore, these less colored (lower redness a*) presented higher lightness L* value C0 while their mechanical resistance similar. Raw increased 16th week post-spawning. The steadily decreased 4th 24th did not change afterwards, whereas 8th Fillet declined progressively with significant 13th week. Concerning smoked fillet, smoking that trout. Thereafter slowly until reaching color similar fillet. At experiment, most parameters PS33 those C33 We discuss recovery three sequential phases. On whole, our study reports properties recovered 24 (≈1400 °C.day).
